Oven Baked Fries

Ingredients

1 Potato
3 Tbsp Avocado Oil (or any safe oil of your choosing)
Salt

Directions

Peel potato, then cut in half (your cut should make your potato shorter, not flatter).  Then cut each side into 10-12 wedges.

Soak the potato wedges in a bowl of hot water for 10 minutes.

Preheat oven to 475 degrees (F).

Coat rimmed cookie sheet (non-stick works best) with 2 Tbsp of avocado oil, then sprinkle with salt.

Drain potato wedges and pat dry with paper towels.  Wipe bowl dry, then use it to toss potatoes with remaining 1 Tbsp avocado oil.

Place potato wedges on the oiled cookie sheet in a single layer.  Cover sheet tightly with foil.

Bake for 5 minutes, then remove foil.  Bake for an additional 10-15 minutes (until the bottoms are golden).

Flip wedges over (you may need to loosen them from the pan first) and continue to bake for an additional 5-10 minutes longer (until the other side is golden as well).

Pat the potatoes dry with a paper towel, then cool to the appropriate temperature for your little one before serving!
